Keto Breakfast Casserole
This keto breakfast casserole is a hearty and filling way to start your day. It's made with breakfast sausage, bell pepper, onion, cheese, eggs, and heavy cream. The casserole is baked in the oven until the eggs are set and the cheese is melted and bubbly.
This recipe was inspired by a classic breakfast casserole that I used to make for my family. I wanted to create a keto-friendly version that was just as delicious and satisfying. After a few rounds of testing, I came up with this recipe. It's now one of my favorite keto breakfast recipes.

Ingredients
  • 12 oz breakfast sausage
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 12 eggs
  • 1/2 cup heavy cream
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Brown the breakfast sausage in a large skillet over medium heat. Drain off any excess grease.
  3. Add the bell pepper and onion to the skillet and cook until softened, about 5 minutes.
  4. Grease a 9x13 inch baking dish.
  5. Spread the sausage mixture in the prepared baking dish.
  6. In a large bowl, whisk together the eggs, heavy cream, salt, and pepper.
  7. Pour the egg mixture over the sausage mixture.
  8. Sprinkle the cheddar and mozzarella cheeses over the egg mixture.
  9. Bake for 30-35 minutes, or until the casserole is set and the cheese is melted and bubbly.
