Ingredients
12 oz breakfast sausage
1 bell pepper, chopped
1 onion, chopped
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
12 eggs
1/2 cup heavy cream
Salt and pepper to taste
Instructions
Preheat oven to 350 degrees F (175 degrees C).
Brown the breakfast sausage in a large skillet over medium heat. Drain off any excess grease.
Add the bell pepper and onion to the skillet and cook until softened, about 5 minutes.
Grease a 9x13 inch baking dish.
Spread the sausage mixture in the prepared baking dish.
In a large bowl, whisk together the eggs, heavy cream, salt, and pepper.
Pour the egg mixture over the sausage mixture.
Sprinkle the cheddar and mozzarella cheeses over the egg mixture.
Bake for 30-35 minutes, or until the casserole is set and the cheese is melted and bubbly.
