I developed this recipe a few years ago when I was looking for a healthy and portable breakfast option. I wanted something that was easy to make and that would keep me full all morning. These muffins fit the bill perfectly. They're packed with protein and fiber, and they're also low in carbs and calories. I love to make a batch of these muffins on the weekend and then grab one or two for breakfast during the week.
