I've been making these nachos ever since, and they're now a staple in my breakfast rotation.

Ingredients
1 bag of pork rinds, crushed
1 cup of shredded cheddar cheese
1/2 cup of chopped green bell pepper
1/4 cup of chopped red onion
1/4 cup of salsa
1/4 cup of sour cream
1 tablespoon of olive oil
Salt and pepper to taste
Instructions
Preheat your air fryer to 350 degrees F (175 degrees C).
Spread the crushed pork rinds in a single layer in the air fryer basket. Spray with olive oil.
Cook for 5-7 minutes, or until golden brown and crispy.
Sprinkle the shredded cheddar cheese on top of the pork rinds.
Top with the green bell pepper, red onion, salsa, and sour cream.
Cook for 2-3 minutes, or until the cheese is melted and bubbly.
Season with salt and pepper to taste.
Serve immediately.
