The inspiration for this Zucchini Noodle Breakfast Skillet came to me one morning as I was looking for a quick and easy way to use up some leftover zucchini. I had been experimenting with spiralizing vegetables, and I thought that zucchini noodles would be a great way to add some extra nutrition to my breakfast. I started by sautéing some diced onions and bell peppers in olive oil. Then, I added the zucchini noodles and cooked them until they were softened. I created wells in the vegetable mixture and cracked an egg into each well. I seasoned the eggs with salt and pepper and covered the skillet. After a few minutes, the eggs were cooked to perfection. I garnished the skillet with fresh parsley and grated Parmesan cheese, and served it with a side of toast. This Zucchini Noodle Breakfast Skillet has become a regular part of my weekly breakfast routine. It's a delicious and satisfying way to start the day, and it's also a great way to get some extra vegetables into your diet.
