Ingredients
  • 1 pound ground beef
  • 1 pound ground pork
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1/4 cup bread crumbs
  • 1 egg
  • 1/4 cup chopped onion
  • 1/4 cup chopped parsley
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, combine the ground beef, ground pork, Parmesan cheese, almond flour, bread crumbs, egg, onion, and parsley.
  3. Mix well and form into 1-inch meatballs.
  4. Place the meatballs on a baking sheet and bake for 20 minutes, or until cooked through.
  5. While the meatballs are baking, make the marinara sauce. In a large saucepan, combine the tomatoes, tomato sauce, onion, garlic, basil, oregano, and salt and pepper to taste.
  6. Bring to a simmer and cook for 15 minutes, or until the sauce has thickened.
  7. Add the meatballs to the marinara sauce and simmer for 10 minutes more, or until the meatballs are heated through.
  8. Serve over zucchini noodles or cauliflower rice.
