Bacon and Egg Breakfast Cups

The idea for these breakfast cups came to me one morning when I was trying to figure out what to do with some leftover bacon. I had already made scrambled eggs and toast, but I wanted something a little more special. So, I decided to try making these cups, and they were a hit! My family loved them, and I've been making them ever since.

Ingredients
  • 12 slices bacon
  • 12 eggs
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup milk
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Line a muffin tin with bacon slices.
  3. In a bowl, whisk together the eggs, onion, green bell pepper, red bell pepper, cheddar cheese, milk, salt and pepper.
  4. Pour the egg mixture into the bacon-lined muffin cups.
  5. Bake for 20-25 minutes, or until the eggs are set.
  6. Let cool for a few minutes before serving.
