The idea for these breakfast cups came to me one morning when I was trying to figure out what to do with some leftover bacon. I had already made scrambled eggs and toast, but I wanted something a little more special. So, I decided to try making these cups, and they were a hit! My family loved them, and I've been making them ever since.

Ingredients
12 slices bacon
12 eggs
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/4 cup chopped red bell pepper
1/4 cup shredded cheddar cheese
1/4 cup milk
Salt and pepper to taste
Instructions
Preheat oven to 350 degrees F (175 degrees C).
Line a muffin tin with bacon slices.
In a bowl, whisk together the eggs, onion, green bell pepper, red bell pepper, cheddar cheese, milk, salt and pepper.
Pour the egg mixture into the bacon-lined muffin cups.
Bake for 20-25 minutes, or until the eggs are set.
Let cool for a few minutes before serving.
