Grilled Salmon
A moist, flavorful grilled salmon paired with a creamy cauliflower mash. The zesty lemon-herb butter brings it all together for a simple but elegant meal.
This recipe was inspired by a trip to the Pacific Northwest, where I had the opportunity to experience the freshest salmon of my life. The flaky, tender texture and rich flavor were unlike anything I had ever tasted before. I knew I had to recreate this dish at home, and after a few experiments, I came up with this recipe. The combination of the grilled salmon, the creamy cauliflower mash, and the lemon-herb butter is simply divine, and I'm sure you'll enjoy it as much as I do.

Ingredients
  • 1 pound salmon fillet, skin-on
  • 1 tablespoon olive oil
  • 1 lemon, zested and juiced
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 head of cauliflower, cut into florets
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Line a baking sheet with parchment paper.
  3. Place salmon fillet on the prepared baking sheet, skin-side down.
  4. Drizzle with olive oil and sprinkle with lemon zest, parsley, dill, salt, and pepper.
  5. Roast in preheated oven for 15-20 minutes, or until salmon is cooked through.
  6. While salmon is roasting, cook cauliflower in a large pot of boiling water until tender.
  7. Drain cauliflower and mash with a potato masher.
  8. Serve salmon with lemon-herb butter and cauliflower mash.
