Ingredients
1 pound salmon fillet, skin-on
1 tablespoon olive oil
1 lemon, zested and juiced
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh dill
1/2 teaspoon salt
1/4 teaspoon black pepper
1 head of cauliflower, cut into florets
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Line a baking sheet with parchment paper.
Place salmon fillet on the prepared baking sheet, skin-side down.
Drizzle with olive oil and sprinkle with lemon zest, parsley, dill, salt, and pepper.
Roast in preheated oven for 15-20 minutes, or until salmon is cooked through.
While salmon is roasting, cook cauliflower in a large pot of boiling water until tender.
Drain cauliflower and mash with a potato masher.
Serve salmon with lemon-herb butter and cauliflower mash.
