Ingredients
  • 1 lb chicken tenders
  • 1 cup almond flour
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs
  • 1/4 cup Dijon mustard
  • 1 tbsp honey
  • 1 tbsp lemon juice
Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix almond flour, garlic powder, paprika, salt, and black pepper.
  3. In another bowl, whisk the eggs.
  4. Dip each chicken tender in the egg mixture, then coat with the almond flour mixture, and place on the baking sheet.
  5. Bake for 20-25 minutes until chicken is cooked through and coating is crispy.
  6. In a small bowl, mix Dijon mustard, honey, and lemon juice to make the dip.
  7. Serve the chicken tenders with the Dijon mustard dip on the side.
