Kohlrabi and Apple Slaw

Ingredients
  • 1 medium kohlrabi, peeled and thinly sliced
  • 1 medium apple, cored and thinly sliced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
Instructions
  1. In a large bowl, combine the kohlrabi, apple, red onion and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt and pepper.
  3. Pour the dressing over the slaw and toss to coat.
  4. Chill for at least 30 minutes before serving.
