Kimchi and Tofu Tacos

Ingredients
  • 1 package extra firm tofu, drained and pressed
  • 1 tablespoon cornstarch
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1/2 cup kimchi, chopped
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 12 corn tortillas
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cut the tofu into 1-inch cubes and toss with the cornstarch and soy sauce.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the tofu and cook until golden brown on all sides.
  5. Add the kimchi, green onions, and cilantro to the skillet and cook until heated through.
  6. Warm the tortillas in the oven or microwave.
  7. Fill the tortillas with the tofu mixture and top with your favorite toppings.
  8. Enjoy!
