Ingredients
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1 jalapeno pepper, seeded and minced (optional)
Instructions
  1. In a large bowl, combine the beans, corn, bell peppers, onion, and jalapeno pepper (if using).
  2. In a small bowl, whisk together the lime juice, olive oil, cilantro, cumin, and salt and pepper to taste.
  3. Pour the dressing over the salad and toss to coat.
  4. Serve immediately or chill for later.
