The first time I had tandoori cauliflower was at an Indian restaurant. I was immediately hooked on the smoky, slightly spicy flavor. I knew I had to recreate the dish at home, but I wanted to make it vegetarian. After some experimenting, I came up with this recipe for Tandoori Cauliflower Steaks. It's easy to make and can be tailored to your own taste preferences. I like to serve it with a side of rice and a dollop of yogurt. But it's also great on its own as a snack or appetizer.

1 head of cauliflower, sliced into steaks
1 cup coconut yogurt
2 tablespoons tandoori seasoning
1 tablespoon lemon juice
2 cloves garlic, minced
1 teaspoon grated ginger
Salt and pepper, to taste
Fresh cilantro, for garnish
Instructions

In a bowl, mix together the coconut yogurt, tandoori seasoning, lemon juice, garlic, ginger, salt, and pepper.
Brush the tandoori marinade over both sides of the cauliflower steaks.
Place the cauliflower steaks on a baking sheet lined with parchment paper.
Bake in the preheated oven for 25-30 minutes, or until the cauliflower is tender.
Garnish with fresh cilantro before serving.
Why It Works
The yogurt marinade helps to keep the cauliflower moist and tender.
The tandoori seasoning gives the cauliflower a smoky, slightly spicy flavor.
Baking the cauliflower steaks at a high temperature helps to caramelize the edges and give them a slightly crispy texture.
Garnishing the cauliflower steaks with fresh cilantro adds a fresh, herbaceous flavor.
