Whipped Feta and Zucchini Cream Dip
This whipped feta and zucchini cream dip is the perfect summer appetizer. It's light and refreshing, with a creamy texture and a bright, herbaceous flavor. The zucchini is roasted until tender and caramelized, giving the dip a slightly sweet flavor. The feta cheese adds a salty, tangy flavor, and the Greek yogurt makes the dip smooth and creamy. The fresh herbs add a bright, herbaceous flavor, and the lemon juice adds a touch of acidity. This dip is perfect for serving with pita bread, crackers, or vegetables.
I first came up with this dip a few years ago when I was looking for a light and refreshing appetizer to serve at a summer party. I had some zucchini in my garden that needed to be used up, so I decided to roast them and see what happened. I was so happy with the results! The roasted zucchini was sweet and caramelized, and it paired perfectly with the salty feta cheese and creamy Greek yogurt. I've been making this dip ever since, and it's always a hit with my friends and family.
