Radish and Watercress Salad
This salad is a bright and refreshing way to start any meal. The radishes add a slightly spicy bite, while the watercress is peppery and herbaceous. The red onion adds a bit of sweetness, and the fresh mint and cilantro add a bright, citrusy flavor. The dressing is made with lemon juice, tahini, and olive oil, and it's creamy and tangy. This salad is a great way to use up fresh spring vegetables, and it's also a good source of vitamins and minerals.
This salad was inspired by a trip I took to the farmers market a few weeks ago. I was looking for something light and refreshing to eat for lunch, and I came across a beautiful bunch of radishes and watercress. I also had some red onion, fresh mint, and cilantro on hand, so I decided to throw them all together into a salad. The result was so delicious that I knew I had to share it with you all!
