Ingredients
1 pound breakfast sausage
12 eggs
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/4 cup chopped red bell pepper
1 (10.75 ounce) can diced tomatoes with green chilies, undrained
Instructions
Preheat oven to 350 degrees F (175 degrees C).
Brown the sausage over medium heat in a large skillet. Drain the grease.
In a large bowl, whisk together the eggs, cheddar cheese, mozzarella cheese, onion, bell peppers, and tomatoes.
Stir in the browned sausage.
Pour the mixture into a 9x13-inch baking dish.
Bake until the center is set and a toothpick inserted into the center comes out clean, about 30 minutes.
Let stand for 10 minutes before serving.
