The inspiration for these fritters came to me one day when I was browsing through a farmers market. I saw some beautiful zucchini and halloumi cheese, and I knew I had to create a dish that showcased both of these ingredients. I started by experimenting with different combinations of herbs and spices, and I finally settled on a combination of oregano, garlic, and lemon zest. The oregano adds a bright, herbaceous flavor, the garlic adds a savory depth, and the lemon zest adds a touch of brightness. The halloumi cheese adds a salty, tangy flavor and a chewy texture to the fritters. I also experimented with different types of flour, and I found that a combination of almond flour and chickpea flour worked best. The almond flour gives the fritters a light and fluffy texture, while the chickpea flour adds a bit of heartiness. These fritters are a delicious and easy-to-make appetizer or side dish.
