Mustard Greens and Quinoa Salad
Mustard greens and quinoa combine to create a vibrant and flavorful salad in which the bitterness of the greens is balanced by the sweetness of the quinoa, the crunch of the red onion, and the brightness of the herbs. A simple vinaigrette brings it all together to create a satisfying and healthy dish.
This salad is inspired by the flavors of classic Southern cooking, where mustard greens are often cooked with bacon and vinegar. I wanted to create a lighter, more modern version of this dish that would be just as flavorful but without all the fat and calories. I started with a simple base of quinoa, which is a good source of protein and fiber. Then I added chopped mustard greens, red onion, parsley, and mint. For the dressing, I used apple cider vinegar, olive oil, salt, and pepper. The result is a salad that is both delicious and nutritious.

Ingredients
  • 1 cup quinoa
  • 2 cups water
  • 1 bunch mustard greens, chopped
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Instructions
  1. Rinse the quinoa in a fine-mesh sieve.
  2. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked through and the water has been absorbed.
  3. While the quinoa is cooking, prepare the salad dressing. In a small bowl, whisk together the apple cider vinegar, olive oil, salt, and pepper.
  4. In a large bowl, combine the cooked quinoa, mustard greens, red onion, parsley, and mint. Pour the dressing over the salad and toss to coat.
  5. Serve immediately or refrigerate for later.
Why It Works
  • The combination of quinoa and mustard greens creates a great balance of flavors and textures.
  • The red onion adds a bit of crunch and sweetness to the salad.
  • The fresh herbs add a bright, herbaceous flavor to the salad.
  • The apple cider vinegar dressing is light and refreshing, and it helps to bring all of the flavors together.
