Ingredients
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can artichoke hearts, drained and quartered
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup vegetable broth
  • 1/2 cup unsweetened coconut milk
  • 1 bunch kale, chopped
Instructions
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the artichoke hearts, tomatoes, vegetable broth, and coconut milk to the pot.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add the kale to the pot and cook until wilted, about 5 minutes more.
  6. Season with salt and pepper to taste.
  7. Serve hot with crusty bread or rice.
