Quinoa Salad with Sun-Dried Tomatoes and Feta

Ingredients
  • 1 cup quinoa
  • 1 1/2 cups water or vegetable broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
Instructions
  1. Rinse the quinoa in a fine-mesh sieve.
  2. In a medium saucepan, combine the quinoa and water or broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the liquid has been absorbed.
  3. Fluff the quinoa with a fork and set aside to cool slightly.
  4. In a large bowl, combine the quinoa, sun-dried tomatoes, feta, red onion, parsley, mint, olive oil, and lemon juice. Season with salt and pepper to taste.
  5. Toss to combine and serve immediately or chill for later.
