Creamy Vegan and Sweet Potato Lasagna

Ingredients
  • 4 medium sweet potatoes, peeled and thinly sliced

  • 1 cup vegetable broth
  • 1/2 cup vegan cream sauce
  • 1 cup frozen peas
  • 1 cup grated vegan cheese
  • 1/2 cup bread crumbs
  • 1 tablespoon olive oil
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, cook the onion and garlic in olive oil until softened.
  3. Add the sweet potatoes and cook for 5 minutes, or until they begin to soften.
  4. Stir in the vegetable broth, vegan cream sauce, peas, and salt and pepper to taste.
  5. Bring to a simmer and cook for 10 minutes, or until the sweet potatoes are tender.
  6. Spread half of the sweet potato mixture into a 9x13-inch baking dish.
  7. Top with half of the vegan cheese.
  8. Repeat layers.
  9. In a small bowl, combine the bread crumbs and olive oil.
  10. Sprinkle the bread crumb topping over the lasagna.
  11. Bake for 20 minutes, or until the lasagna is bubbly and the topping is golden brown.
