Kale and Sweet Potato Lasagna

Ingredients
  • 1 large sweet potato, peeled and thinly sliced
  • 1 bunch kale, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1/2 cup vegetarian broth
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Spread the sweet potato slices in a single layer on a baking sheet. Roast in the preheated oven for 15 minutes, or until tender.
  3. While the sweet potatoes are roasting, heat the olive oil in a large skillet over medium heat.
  4. Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
  5. Add the kale to the skillet and cook until wilted, about 3 minutes.
  6. Stir in the black beans, corn, and tomatoes. Bring to a simmer and cook for 5 minutes.
  7. Spread 1/2 cup of the vegetable broth in the bottom of a 9x13 inch baking dish.
  8. Layer half of the sweet potato slices, half of the kale mixture, and half of the cheese in the baking dish. Repeat layers.
