Ingredients
1 pound of your favorite vegetables, cut into 1-inch cubes (such as zucchini, bell peppers, onions, or mushrooms)
2 tablespoons of olive oil
2 tablespoons of za'atar spice blend
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1/4 cup of tahini
2 tablespoons of lemon juice
1 tablespoon of water
1 clove of garlic, minced
Instructions
Preheat the oven to 400 degrees F (200 degrees C).
In a large bowl, combine the vegetables, olive oil, za'atar spice blend, salt, and pepper. Toss to coat.
Thread the vegetables onto skewers.
Place the skewers on a baking sheet and bake for 20-25 minutes, or until the vegetables are tender and slightly browned.
