Ingredients
  • 1 pound of your favorite vegetables, cut into 1-inch cubes (such as zucchini, bell peppers, onions, or mushrooms)
  • 2 tablespoons of olive oil
  • 2 tablespoons of za'atar spice blend
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of tahini
  • 2 tablespoons of lemon juice
  • 1 tablespoon of water
  • 1 clove of garlic, minced
Instructions
  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine the vegetables, olive oil, za'atar spice blend, salt, and pepper. Toss to coat.
  3. Thread the vegetables onto skewers.
  4. Place the skewers on a baking sheet and bake for 20-25 minutes, or until the vegetables are tender and slightly browned.
  5. While the vegetables are grilling, make the tahini dip by whisking together the tahini, lemon juice, water, and garlic in a small bowl.
  6. Serve the vegetable skewers with the tahini dip.
