Ingredients
  • 1 medium sweet potato, peeled and diced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons taco seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Spread sweet potato cubes on a baking sheet and roast for 20-25 minutes, or until soft and slightly browned.
  3. While the sweet potatoes are roasting, heat a little olive oil over medium heat in a saucepan.
  4. Add the onion and bell pepper and cook until softened about 5 minutes.
  5. Add the black beans, taco seasoning, salt, and pepper and cook for 5 minutes more.
  6. Remove from heat and stir in the cilantro.
  7. Place a large tortilla on a plate and spoon some of the sweet potato and black bean mixture in the center.
  8. Top with your favorite toppings, such as salsa, guacamole, or sour cream.
