Ingredients
1 head of cauliflower
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup chopped onion
1/4 cup chopped bell pepper
1/4 cup chopped ham
2 eggs
1/2 cup heavy cream
1/4 teaspoon salt
1/4 teaspoon pepper
Instructions
Preheat oven to 375 degrees F (190 degrees C).
Grate the cauliflower into a large bowl.
Place the cauliflower in a microwave-safe bowl and microwave for 5 minutes, or until tender.
Drain the cauliflower and press out any excess moisture.
Transfer the cauliflower to a medium bowl and add the cheddar cheese, mozzarella cheese, onion, bell pepper, and ham.
In a separate bowl, whisk together the eggs, heavy cream, salt, and pepper.
Add the wet ingredients to the dry ingredients and mix well.
