Ingredients
  • 1 head of cauliflower
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1/4 cup chopped ham
  • 2 eggs
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Grate the cauliflower into a large bowl.
  3. Place the cauliflower in a microwave-safe bowl and microwave for 5 minutes, or until tender.
  4. Drain the cauliflower and press out any excess moisture.
  5. Transfer the cauliflower to a medium bowl and add the cheddar cheese, mozzarella cheese, onion, bell pepper, and ham.
  6. In a separate bowl, whisk together the eggs, heavy cream, salt, and pepper.
  7. Add the wet ingredients to the dry ingredients and mix well.
  8. Pour the quiche mixture into a greased 9-inch pie plate.
  9. Bake for 30-35 minutes, or until the center is set.
