Superfood Salad with Spinach, Quinoa, and Roasted Vegetables

Ingredients
  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 zucchini, cut into 1-inch pieces
  • 1/2 cup red onion, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
Instructions
  1. Rinse the quinoa in a fine-mesh sieve.
  2. Combine the quinoa, water, and olive oil in a medium saucepan.
  3. Bring to a boil over medium-high heat.
  4. Reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked through and the liquid has been absorbed.
  5. Preheat oven to 400 degrees F (200 degrees C).
  6. In a large bowl, combine the bell peppers, zucchini, red onion, and black beans.
  7. Drizzle with olive oil and season with salt and pepper.
  8. Spread the vegetables on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned.
