Ingredients
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup taco seasoning
Instructions
  1. Cook quinoa according to package directions.
  2. In a large skillet, heat a little oil over medium heat.
  3. Add chickpeas, green bell pepper, red bell pepper, and onion to the skillet.
  4. Cook until vegetables are softened, about 5 minutes.
  5. Stir in taco seasoning and cook for 1 minute more.
  6. Add quinoa to the skillet and stir to combine.
  7. Heat through for 2 minutes.
  8. Top with cilantro.
