Ingredients
  • Broccoli florets

Instructions
  1. Preheat oven to 400°F (200°C).
  2. On a large baking sheet, toss the broccoli, bell pepper, zucchini, and red onion with olive oil, salt, and pepper.
  3. Roast the vegetables for 20-25 minutes, or until they are tender and slightly browned.
  4. While the vegetables are roasting, cook the brown rice according to the package directions.
  5. To make the lemon-oregano dressing, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
  6. Assemble the burrito bowls by spooning the brown rice into bowls and topping with the roasted vegetables, black beans, and lemon-oregano dressing.
