The inspiration for this Thai Green Curry Burrito Bowl came to me after a trip to Thailand. I was so impressed by the flavors of the food there, and I wanted to recreate some of those flavors in my own kitchen. I started by experimenting with different green curry pastes, and I eventually came up with a recipe that I really loved. I then added some vegetables to the dish, and I finished it off with a creamy coconut cilantro sauce. The result is a dish that is both flavorful and satisfying.
