The Big Vegan Burrito Bowl was born out of a desire for a quick and easy vegan meal that was also packed with flavor. I wanted something that would be hearty and satisfying, but that wouldn't take hours to make. After some experimentation, I came up with this recipe, and it's quickly become one of my favorites. It's perfect for busy weeknights, and it's also a great meal to prep ahead of time for lunches throughout the week.
