Tempeh and Mushroom Tacos
Tempeh and Mushroom Tacos are a delicious and healthy vegan alternative to traditional tacos. Ingredients
  • 1 package tempeh, crumbled
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1/2 cup chopped fresh cilantro
  • 12 corn tortillas
Instructions
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the tempeh and cook until browned, about 5 minutes.
  3. Add the onion and bell pepper and cook until softened, about 5 minutes.
  4. Stir in the black beans, tomatoes, and cilantro.
  5. Bring to a simmer and cook for 10 minutes, or until the mixture is heated through.
  6. Spoon the mixture into the tortillas and serve immediately.
