Ingredients
  • 1 large sweet potato, peeled and cubed
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 1 jalapeño pepper, seeded and minced
  • 1 tablespoon taco seasoning
  • Salt and black pepper to taste
  • 8 corn tortillas
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss sweet potato cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned.
  3. While the sweet potatoes are roasting, heat a large skillet over medium heat. Add the onion, bell pepper, and jalapeño and cook until softened, about 5 minutes.
