I first came across this recipe when I was living in Austin, Texas. I was working at a food truck that specialized in tacos, and we were always looking for new and exciting recipes to add to our menu. One day, our chef came up with this recipe for Spicy Bean and Sweet Potato Tacos, and it was an instant hit. The tacos were so flavorful and satisfying, and they were a great way to use up leftover sweet potatoes. I've been making these tacos ever since, and they're always a hit with my friends and family. I hope you enjoy them as much as I do!

Ingredients
1 large sweet potato, peeled and cubed
1 can (15 ounces) black beans, rinsed and drained
1/2 onion, chopped
1 red bell pepper, chopped
1 jalapeño pepper, seeded and minced
1 tablespoon taco seasoning
Salt and black pepper to taste
8 corn tortillas
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Toss sweet potato cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned.
While the sweet potatoes are roasting, heat a large skillet over medium heat. Add the onion, bell pepper, and jalapeño and cook until softened, about 5 minutes.
Add the black beans and taco seasoning to the skillet and cook for 5 minutes more, or until the beans are heated through.
Warm the tortillas in the microwave or on a griddle.
Fill the tortillas with the roasted sweet potatoes, black bean mixture, and your favorite toppings, such as salsa, guacamole, or sour cream.
Serve immediately.
Why It Works
The combination of sweet potatoes and black beans is a delicious and satisfying one. The sweet potatoes provide a natural sweetness, while the black beans add protein and fiber.
The taco seasoning adds a flavorful kick to the tacos. You can use your favorite store-bought taco seasoning, or you can make your own using chili powder, cumin, oregano, and other spices.
The tacos are easy to make. Simply roast the sweet potatoes, simmer the black beans, and warm the tortillas. Then, fill the tortillas with the roasted sweet potatoes, black bean mixture, and your favorite toppings.
