Ingredients
  • 1 pound Brussels sprouts, trimmed and halved

  • 1/4 teaspoon black pepper
  • 12 small corn tortillas
  • 1 ripe avocado, mashed
  • 1/4 cup chopped cilantro
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine the Brussels sprouts, sweet potatoes, olive oil, chili powder, smoked paprika, salt, and black pepper. Toss to coat.
  3. Spread the vegetables in an even layer on a baking sheet.
  4. Roast for 25-30 minutes, or until the vegetables are tender and browned.
  5. While the vegetables are roasting, heat the tortillas in a skillet over medium heat.
