Ingredients
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup granulated sweetener
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened almond milk
  • 2 eggs
  • 1/4 cup melted butter
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Line a muffin tin with paper liners.
  3. In a large bowl, combine the almond flour, coconut flour, sweetener, baking powder, and salt.
  4. In a separate bowl, whisk together the almond milk, eggs, and melted butter.
  5. Add the wet ingredients to the dry ingredients and stir until just combined.
  6. Fill the prepared muffin cups about 3/4 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
