Why It Works
  • Cannellini beans: These creamy, slightly nutty beans provide a hearty base for the stew. Their mild flavor allows the other ingredients to shine through.
  • Vegetables: A combination of onion, garlic, carrots, and celery creates a flavorful and aromatic foundation for the stew. The slow cooking process allows the vegetables to caramelize slightly, adding depth and sweetness.
  • Vegetable broth: A flavorful vegetable broth forms the liquid base of the stew. It enhances the overall flavor and provides a comforting warmth.
  • Spinach: Fresh spinach adds a vibrant pop of color and a touch of bitterness that balances the sweetness of the vegetables and beans.
  • Slow cooking: Simmering the stew for 30 minutes allows the flavors to meld and deepen, resulting in a rich and satisfying broth.
