Tempeh and Ginger Tacos with Coconut-Lime Dipping Sauce
Tempeh's mild, nutty flavor is the perfect foil for the sweet, spicy, and tangy flavors in this taco filling. The coconut-lime dipping sauce adds a refreshing brightness to the tacos, making them the perfect summer meal.
I first had tempeh tacos at a food truck in Austin, Texas. I was immediately hooked on the combination of the crispy tempeh, the flavorful filling, and the creamy dipping sauce. I've been experimenting with different recipes for tempeh tacos ever since, and this is my current favorite. I love the way the maple syrup caramelizes the tempeh, giving it a slightly sweet and smoky flavor. The cumin and chili powder add a warm, earthy spice, and the salt and pepper help to balance out the flavors. The coconut-lime dipping sauce is the perfect finishing touch, adding a refreshing brightness to the tacos. I hope you enjoy this recipe as much as I do!

Why It Works
  • The tempeh is sliced into thin strips, which helps it to cook evenly and get crispy.
  • The tempeh is marinated in a flavorful mixture of soy sauce, maple syrup, cumin, chili powder, salt, and pepper.
  • The tempeh is cooked in a hot skillet until it is golden brown and crispy.
  • The coconut-lime dipping sauce is made with a combination of coconut milk, lime juice, maple syrup, and salt. The coconut milk adds a creamy richness, the lime juice adds a refreshing brightness, and the maple syrup adds a touch of sweetness.
