I was tired of eating the same old scrambled eggs every morning, so I started experimenting with different ingredients. I added some chopped vegetables, some cheese, and some heavy cream, and the Sunrise Scramble was born.

Ingredients
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 cup mushrooms, sliced
  • 1/2 cup spinach, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup heavy cream
Instructions
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion, green bell pepper, red bell pepper, and mushrooms to the skillet and cook until softened, about 5 minutes.
  3. Add the spinach to the skillet and cook until wilted, about 1 minute.
  4. Stir in the cheddar cheese and heavy cream.
  5. Cook until the cheese is melted and bubbly, about 1 minute more.
  6. Serve immediately.
