Ingredients
  • 2 ripe avocados, halved and pitted
  • 1 cup cooked quinoa
  • 1/2 cup cooked black beans (or one 15-oz can, rinsed and drained)
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Scoop out the flesh of the avocados into a bowl, leaving the skin intact.
  3. Mash the avocado flesh with a fork and stir in the quinoa, black beans, red onion, cilantro, lime juice, cumin, and salt and pepper to taste.
  4. Spoon the filling back into the avocado skins.
  5. Bake for 15-20 minutes, or until heated through.
  6. Serve with your favorite salsa.
