Crispy Zucchini and Chickpea Fritters with Lemon-Tahini Sauce
These fritters are a delicious and healthy way to use up leftover zucchini and chickpeas. They're crispy on the outside, soft and flavorful on the inside, and the lemon-tahini sauce adds a bright and tangy flavor. Serve them as an appetizer, main course, or side dish.
The inspiration for these fritters came to me one day when I was cleaning out my refrigerator. I had some leftover zucchini and chickpeas, and I wasn't sure what to do with them. I started experimenting with different ingredients and flavors, and these fritters were born. I've been making them ever since, and they're always a hit with my family and friends.
