These Blissful Bites are the perfect on-the-go snack or post-workout refuel. They're packed with wholesome ingredients like oats, nuts, seeds, and dried fruit, and they're sweetened with just a touch of honey and peanut butter. Plus, they're vegan and gluten-free, so they're suitable for a variety of dietary needs.
The inspiration for these Blissful Bites came to me one day when I was looking for a healthy snack that would also satisfy my sweet tooth. I wanted something that was easy to make, portable, and packed with nutrients. After some experimenting, I came up with this recipe, and I've been hooked ever since.

Ingredients
  • 1 cup rolled oats
  • 1/2 cup chopped nuts (such as almonds, walnuts, or pecans)
  • 1/2 cup chopped seeds (such as chia seeds, flax seeds, or sunflower seeds)
  • 1/4 cup dried fruit (such as raisins, cranberries, or cherries)
  • 1/4 cup vegan chocolate chips
  • 1/4 cup peanut butter
  • 1/4 cup honey
  • 1 tablespoon vanilla extract
Instructions
  1. In a large bowl, combine the oats, nuts, seeds, dried fruit, and chocolate chips.
  2. In a separate bowl, whisk together the peanut butter, honey, and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and mix until well combined.
  4. Roll the mixture into 1-inch balls.
  5. Place the energy bites on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes before serving.
