Ingredients
  • 1 cup chopped bottle gourd
  • 1/2 cup rice
  • 1/2 cup yellow lentils
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • 1 teaspoon salt
  • 3 cups water
Instructions
  1. Rinse the rice and lentils until the water runs clear.
  2. In a pressure cooker, heat 1 tablespoon of oil over medium heat.
  3. Add the cumin seeds and coriander seeds and cook until they splutter.
  4. Add the ginger-garlic paste and cook for 1 minute.
  5. Add the bottle gourd, rice, lentils, turmeric powder, red chili powder, and salt.
  6. Stir to combine.
  7. Add 3 cups of water.
  8. Close the pressure cooker and cook on high heat for 2 whistles.
  9. Reduce the heat to low and cook for 10 minutes.
  10. Turn off the heat and let the pressure release naturally.
  11. Open the pressure cooker and fluff the khichdi with a fork.
  12. Serve hot with a dollop of yogurt or chutney.
