Ingredients
  • 1 pound ground lamb
  • 1/2 cup chopped onion
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. In a large bowl, combine all the ingredients for the koftas.
  2. Mix well until everything is evenly combined.
  3. Form the mixture into 12-15 koftas.
  4. Heat a grill or grill pan over medium heat.
  5. Grill the koftas for about 10 minutes, or until cooked through.
  6. While the koftas are grilling, make the relish.
  7. In a food processor, combine the pistachios, mint, lemon juice, olive oil, salt, and pepper.
  8. Pulse until a coarse relish forms.
