Lamb kofta is a Middle Eastern dish made from ground lamb that is mixed with spices and herbs and then grilled. This recipe uses a combination of cumin, coriander, salt, and black pepper to flavor the kofta, and it is served with a pistachio mint relish that adds a bright and herbaceous flavor to the dish.
Kofta is a popular dish in many Middle Eastern countries, and there are many different variations on the recipe. This recipe is inspired by the kofta that I ate in Jordan, where the kofta is typically grilled over an open flame and served with a variety of relishes and sauces. The pistachio mint relish is a particularly nice touch, as it adds a bright and herbaceous flavor to the dish. I like to make this dish with ground lamb, but you could also use ground beef or turkey if you prefer.
