Ingredients
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil

  • 1 cup frozen peas
Instructions
  1. Rinse the quinoa in a fine-mesh sieve.
  2. Heat the olive oil in a medium saucepan over medium heat.
  3. Add the onion and cook until softened, about 5 minutes.
  4. Add the garlic and cook for 1 minute more.
  5. Stir in the quinoa and cook for 1 minute, or until toasted.
  6. Add the vegetable broth and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked through and the liquid has been absorbed.
