Ingredients
  • Lasagna noodles
  • Onion
  • Bell pepper
  • Zucchini
  • Baby spinach
  • Homemade or store-bought marinara sauce
  • Homemade or store-bought vegan bechamel sauce
Instructions
  1. Preheat oven to 375°F.
  2. In a large skillet, sauté the chopped onion, bell pepper and zucchini until softened.
  3. In a large mixing bowl, combine the softened vegetables, marinara sauce, cooked lasagna noodles and baby spinach. Mix well.
  4. Spread one-third of the vegetable mixture into the bottom of a 9x13-inch baking dish.
  5. Top with one-half of the bechamel sauce.
  6. Repeat layers once.
  7. Bake for 25-30 minutes, or until the lasagna is bubbly and heated through.
  8. Let the lasagna rest for 10 minutes before slicing and serving.
