Roasted Vegetable and Quinoa Bowl
This roasted vegetable and quinoa bowl is a hearty, healthy, and flavorful meal that is perfect for lunch or dinner. Ingredients
  • 1 cup cooked quinoa
  • 1 cup roasted vegetables ( such as broccoli, cauliflower, carrots, or potatoes)
  • 1/2 cup chopped red onion
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
Instructions
  1. In a large bowl, combine the quinoa, roasted vegetables, red onion, cucumber, and cilantro.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat.
  4. Serve immediately.
