Kimchi and Vegan Sausage Sensation

This recipe was inspired by my love of kimchi and vegan sausage. I wanted to create a dish that was both hearty and flavorful, and that could be made in a short amount of time. This recipe is perfect for a weeknight meal.

Ingredients
  • 2 tablespoons olive oil
  • 1 package vegan sausage, crumbled
  • 1 cup kimchi, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
Instructions
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the vegan sausage and cook until browned.
  3. Add the kimchi, onion, green bell pepper, and red bell pepper to the skillet and cook until softened.
  4. Stir in the soy sauce and rice vinegar.
  5. Bring the mixture to a simmer and cook for 5 minutes.
  6. Serve over rice or noodles.
