Ingredients
  • 1 large cucumber, peeled and seeded
  • 1 cup plain Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice

  • 1/4 teaspoon dried dill
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Grate the cucumber using a coarse grater.
  2. Place the grated cucumber in a colander and sprinkle with salt. Let it sit for 10 minutes.
  3. Squeeze the excess water out of the cucumber.
  4. In a medium bowl, combine the grated cucumber, yogurt, garlic, lemon juice, olive oil, dill, salt, and pepper. Mix until well combined.
  5. Refrigerate for at least 30 minutes before serving.
