Ingredients
1 tablespoon olive oil
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
2 cloves garlic, minced
4 cups vegetable broth
1 tablespoon miso paste
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
Heat the olive oil in a large pot over medium heat.
Add the onion, carrots, celery and garlic to the pot and cook until softened, about 5 minutes.
Add the vegetable broth, miso paste, salt and pepper to the pot and bring to a boil.
Reduce the heat to low and simmer for 15 minutes, or until the vegetables are tender.
