Ingredients
  • 1 tbsp olive oil
  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 2 carrots, diced
  • 2 celery sticks, diced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 cup dried wild rice
Instructions
  1. Heat the olive oil over medium high heat in a large pot or dutch oven.
  2. Add the onion, bell pepper, carrots, and celery and sauté for 5-7 minutes, until the vegetables begin to soften.
  3. Add the beans, corn, wild rice and 4 cups of water or broth to the pot.
  4. Bring to a boil then reduce to a simmer and cook for 30 minutes, or until the rice is tender and the chili has thickened.
  5. Season to taste with salt and pepper.
