Crispy Smashed Potatoes with Garlic and Thyme

Ingredients
  • 2 pounds (900g) Yukon Gold potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves of garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1/2 cup (1 stick or 115g) unsalted butter, melted
Instructions
  1. Preheat oven to 425°F (220°C).
  2. Scrub potatoes clean and cut into 1-inch (2.5cm) cubes.
  3. Combine potatoes, olive oil, salt, and pepper in a large bowl.
  4. Spread potatoes on a baking sheet and bake for 20 minutes, or until they are golden brown and crispy.
  5. In a small bowl, combine garlic, thyme, and butter.
  6. Remove potatoes from the oven and smash them with the back of a fork or a potato masher.
  7. Pour the garlic-thyme butter over the potatoes and toss to coat.
  8. Return potatoes to the oven and bake for an additional 10 minutes, or until they are heated through.
