Ingredients
  • 2 lbs grass-fed beef stew meat
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 red bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef broth
  • 1 bunch fresh cilantro, chopped
  • Salt and pepper to taste
Instructions
  1. In a large pot, heat olive oil over medium-high heat.
  2. Add the beef stew meat and brown on all sides.
  3. Add the onion, garlic, ginger, and red bell pepper. Cook until vegetables are softened.
  4. Stir in the diced tomatoes and beef broth. Bring to a simmer.
  5. Cover and cook on low heat for 1.5-2 hours, or until beef is tender.
  6. Stir in chopped cilantro and season with salt and pepper.
  7. Serve hot and enjoy!
